The Ritz-Carlton, Charlotte is a LEEDS-certified green hotel, so it's only right that its gingerbread house be green as well. The edible gingerbread house, measuring 10 feet by 14 feet, is made entirely from sustainable, recycled materials and organic ingredients. Built in a Tudor style, it is illuminated by LED lights and features a "vegetated" moss roof.

Fun Fact: It may be environmentally friendly, but that doesn't mean it's on your diet! The house was made with over 350 pounds of sugar (organic, of course). That's the amount of sugar the average American eats over three and a half years.
